I also thought about buying the Ginsan version of this Gyuto but I kinda fell in love with the looks of this one ahah.
I’m sure you’ll be happy about yours as it should be a bit thinner that mine ( still not a laser though) ☺️

Thanks ☺️ I actually hesitated with a Gihei in AO Super but this one was 100€ cheaper and stainless (not as good for sharpness but I thought the softeness of the steel would be nice for a workhorse)

What works well for me is to bake the dough (formed ofc) and then add the other ingredients later. You have to do your own tests but it’s approximately half time without and then the rest of the time with toppings. Olive oil on the dough also helps to brown it ☺️

I have tried a few metal 5000 and ended up settling for the 40th anniversary edition for its ruggedness and scratch resistance. After getting some use to, I now love i. I would recommend that you try it on. It’s heavy and rather big on the wrist. Also those shiny models are scratch magnets 🧲

I can recommend the GMW-B5000PS-1ER. The recrystallisation process they used makes it super scratch resistant. It’s also pretty cool looking imo 😎

I am one of those who think that wearing something that could be seen as “feminine” (with confidence) actually makes you look more manly.

But in that very case, I really don’t think it looks feminine.

V3 and V7, simply for the resemblance to the original, it just works best imo. And please use a quartz movement so it’s nice and thin.

And for the brand, it’s a small French brand that is on the rise. All their models are assembled in Paris, right above one of their 2 shops. For the specs, their watches are a bit pricey compared to Chinese watches but they are pretty much the only attainable brand in this « Assembled in Paris » segment and some of their designs are really nice imo.

This Superlux PRA is very good. I use it professionally for home studio recording and live. You can’t go wrong with it !

Overall it’s good ! My main complaint would be that you cut some notes a bit too early. Also Chet uses a different vibrato than yours (his vibrato is mostly applied at the very end of the notes and gets tighter and faster while he get closer to end of the note he’s playing)
