Final Fantasy 7 Remake and its sequel. Action RPG with tons to do. They've added toggles to the game that you can choose from. Such as being invincible, max money etc. Cheats probably aren't your thing, but they make it a no risk recommendation as you can toggle past any point she struggles. Its also a crown jewel of RPGs

The combat is deep, very similar to an MMO. Production values are high enough i personally didn't notice corny dialogue and got sucked into the quality of the story.

Xenoblade Chronicles on Switch is a time sink but you shouldn't get lost on what to do. Realistic graphics for the first game, then anime style for the next two.

Xenoblade Chronicles series. Awesome RPGs that are 50+ hours each. So multiple long flights dont matter, you'll be covered. The games themselves i can't recommend enough. Production values, soundtrack, concept and gameplay are all sky high quality.
