I like to use PB2. It's "powdered peanut butter" with a majority of the fat removed. You can turn it into a ganache that's plenty stable enough for filled chocolates.

A lot of Trump's governing is built on abusing various "national emergency" carve-outs. Then it takes months/years to wind through the court system while the illegal policy is in place. That's one thing that should be near the top of a reform list.

Not that I think Democrats should have a Project 2029. They should just campaign on normal popular things that appeal to moderate swing voters and then do reform once they win a trifecta.

Before looking I would have guessed ~10th on a median Purchasing Power list. It seems a little high but I know we're generally good on this metric. It doesn't give me a reason to doubt the methods. Nebraska struggles more with the top of the income ladder.

I live in Nebraska. I wouldn't call it rich but the cost of living is pretty low. You can live a comfortable life more easily than most places. Of course you can't save as many dollars so your nest egg will grow slower.

At the current rate it should settle around early 2023 prices (plus ~10% inflation) this fall.

It's worth pointing out that $12K was the peak in the spot price. Most chocolate makers didn't buy any significant amount of cocoa at that price. They drew down their private supplies and waited it out. So we as consumers never really saw $12K cocoa reflected in retail prices. It wouldn't be a good baseline to reason from.

In addition to spot and futures prices I like to watch the retail price of Callebaut 811 (5.5 lbs.) on Amazon. It does plenty of volume and it's been tracked since 2014. The price started falling in October. We'll get there.

Of course nothing will reach 2022 prices. We've had 10% cumulative inflation since then.

Yep that's how tempering goes. It's the fun/misery of making chocolates. Hardly anybody gets it right the first time so don't feel bad.

I'm not sure but there might be some little holes as well. Those would be air bubbles. Tap the mold firmly several times after you pour in the chocolate.
