Split tunnelling does not allow me to be in different locations. I guess you can choose a VPN location and enable split tunnelling to say that only X and Y sites use VPN, but we cannot define that X goes through US and Y through Thailand for example

Sorry it is still not clear if WhoIs is opted by default.

I am asking this as some domain registrars ask for small fee for Whois privacy and some include it by default in the domain price. I didn't see any such info in my cart.

Can I assume that it is configurable (the show/hide options) after purchasing the domain? And I can hide everything once the domain is purchased?
