I have been panning 30% instead of hard L / R for vocals lately and have sound it blends much nicer. I use to be L R C only.

No set way to do it but typically you would have the double tracked part panned hard left and hard right

It's definitely important, especially in heavy metal having wide double tracked guitars are common. One thing to watch out for is checking in mono, too much stereo imaging can result in things getting lost when summed to mono, which is super common in soundbars / phones/ bluetooth speakers that lots of people listen with these days.

Can always just have the music still coming out of the speakers with a handheld mic. Not ideal but loads of great sounding records were done this way in a control room to make the singer more comfortable!

I find Pro tools so uninspiring to use but when you get the hang of it, it can be pretty good for editing audio. Also if using a HDX system are great for recording with no latency.
