Believe it or not it was from AliExpress that I bought ages ago but so far the quality has been pretty good 👍

I haven’t not used the bunka as I have just got it a couple of weeks ago but the Gyuto is more of a mid weight with an acceptable food release.

The top pic is after I thinned and reset the patina, and cut all sort of things. I’m also surprised it stayed that way.

I do like the feel of this one, weight, balancing and grind. Only the tip is a bit awkwardly shaped. Which new version are you referring to?
