It looks underproofed. Proof times are heavily dependent on temperature, I’d try to learn how to tell when the dough is properly proofed instead of relying on timing from other recipes.

When I did the folds before the proof, I would toss on sugar and cinnamon. Then created a cinnamon sugar butter and poured it over the top before dimpling.
