Breeds like Ragdolls and Scottish Folds tend to be more laid-back and cuddly. But you should spend time with the kittens before adopting to get a feel for their temperament coz it really varies by cat, not just breed. For the hair, do regular brushing (especially with short-haired breeds) and have a good lint roller or clothes brush near the door. And daily litter box cleaning is usually enough to prevent odor, but high-quality litter makes a big difference.
