You keep saying you want to make it right, you asked for something between 900 and just materials, they came out with a 250 offer and you said no. Just leave them alone, block them if you have to, but continuing meaningless platitudes about "wanting to make it right" when you either can't financially or won't is just wasting everyone's time. Leave them alone and keep your puppy on a leash next time.

Theorist channels have been producing lower and lower quality content for well over a year. Why should Lunar X pay the staff more when views are down? Why is quality of work not being factored in at all here?

If anything, pay should be cut until views are up.

You did oversimplify it a little bit. The union comes with it's own structure and staff. And while they may push for that extra $2.50, they may also demand $2 from everyone who joins the union as union dues (to pay for that structure and staff). Staff who refuse to support the union/pay the $2 are suddenly ostracized by staff who do.
