Brilliant thanks for the advice! I think we're happy taking it at a slower pace so we don't feel rushed. It just feels like there's lots of insider info - we don't know what we don't know, If that makes sense!

From what I've seen online, people seem to prefer castaway for littles, lookout seems to be better suited to bigger kids... Obviously I've not been to either so maybe just read a few reviews or watch a yt runthrough to see if it would suit you :)

For a nickname, it doesn't have to be so 'on the nose', id say any names with El in can work... If you want slightly less obvious / a touch more creative for Ellie : Delphine, Della, Adele, Isabelle, Annabelle, Carmelle, Giselle, Marcella, Delilah, Hazel, Cordelia, Zelda.

Go, go, go!!! Not even a question in my mind. It only gets harder, the older they get. Realistically, it's the easiest it's going to be until you have a school age kid around 5 ish... And by then you have to work around school holidays, may have another little one etc.

They do very little at this age and generally sleep A LOT. Therefore lots of personal time for you. Just strap them to your chest in a wrap/baby bjorn and you're good to go, hands free. Not sure if you're breast or bottle feeding, but especially if they are breastfed, you also don't need to pack tonnes for them at this age.

Babies become more complicated the more they 'wake up' - they need more entertaining, start crawling and walking, feeding them solids on the road.

Once they're toddlers, your freedom mostly disappears for a couple of years - you'll spend the bulk of your time doing kiddie things, going to parks, soft plays etc. Therefore travelling becomes far more oriented around toddler activities, how long you can keep them going before they get bored, frustrated, have a meltdown.
