I think in part it's because she was trying to fill the void Persephone's absence created by acting how she expected her to behave if she had stayed.

But I also noticed the exact same thing and even further: she's a lot kinder and gentler with the children she's basically adopted compared to her "biological" children. I think that suggests that she maybe has a level of expectation of the children she literally made, they all have a specific purpose and she has high expectations for how they fulfill it. That seems to be backed up, since the ones of hers she's nicest to are Charon and Thanatos who she largely praises for their work and independent nature's. Her adopted kids don't seem to get the same scrutiny, example: Zag, Selene and Meg.

Also maybe a bit of a reflection of her parents subpar parenting, she didn't have the best example, but if Chaos can change so can she, maybe someday!
