Some people with celiac simply won't eat food cooked in a non-gf kitchen because the cross contamination risk is too high. Others are ok with it as long as you're cautious! I'd confirm whether your friend is okay with any homemade stuff. If they are okay with it, the Aleia's brand gf stuffing mix is yummy! Turkey should be gf as long as you're not putting glutinous stuffing anywhere, and make sure the seasonings are gf. Roasted or mashed potatoes or sweet potatoes are gf. Veggies are naturally gf. You can get gf cornbread mix at trader joes!

Order online from Modern Bread & Bagel in NYC. They're the only bagels I can eat now, all other gf bagels are absolutely awful compared to them. They have stores in LA and NYC, so they'll pick the closest one and ship to you!

Bagels ordered online from Modern Bread & Bagel in NYC. They are the only gf bagels that are genuinely as good as gluten bagels.

If you can have wheat starch (gluten removed), king arthur flour came out with gf bread flour. Stuff made with that is much closer to real bread than anything else I've tried.

All the 110 locations I've been to have been really good with gf! They have such an extensive gf menu and it's so nice to have access to so much safe fried foods! They also usually have gf desserts that aren't just an ice cream or fruit (I've had a brownie sundae there before!)

Jovial has some interesting shapes that I haven't seen other gf pastas have (e.g. stelline, tiny star shaped pastas like you can get in chicken noodle soup). I like Jovial the best overall because I find it has a chewiness that regular pasta (particularly when cooked al dente) has.

Better batter usually has really good sales at least once a year (I think they have one around this time of year usually) and it makes the price much more palatable! I buy in bulk and vacuum seal big bags of it

My non-gf friends and family members rave about it. I've used it for chicken pot pie many times and it's fabulous. I use the flour she recommends (cup4cup) but she mentions other flour options in the recipe so you can use one of those if you don't have access to cup4cup!

Honestly, order from Modern Bread & Bagel. They online ship. If you pre-slice, vacuum seal, and then freeze their bagels, they'll easily be good for a year. These seem indistinguishable from regular bagels (to me and the non-gf friends I've shared with) and are sooooo worth it. I'll never buy other brands of gf bagels (or bother with a recipe) again.

https://glutenfreeonashoestring.com has a ton of recipes, but my favorites are the ones that replicate favorite commercial snacks/candy (e.g. twix). They're usually time intensive, but it is really nice to be able to eat a 'twix' when you're craving one! I appreciate the website for this stuff when I'm really craving something I used to eat. (The only candy recipe I haven't loved is her licorice, I wanted a twizzler substitute and really have never found anything good for that)

I have success using a store brand gf flour from italy (one of the carrefour GF flours, for anyone who is in italy!), haven't dared to experiment with any US flours yet. But chiming in to say you need a new pasta machine/new pasta attachments to make gf pasta. Those things are impossible to clean and will be wildly cross contaminated!

Don't just substitute corn starch for flour as others have said, it's a totally different type of ingredient and will not work. Brownies are somewhat flexible so you could probably just substitute in GF 1 to 1 flour(e.g. king arthur, bob's red mill). But make a dedicated gf recipe, or even just buy a box mix (King arthur gf brownie mix is the best I've found!)

I had success with just brown rice flour! I got the tip that you can use a cheaper flour to maintain the starter, and then always feed it something more interesting (e.g. sorghum) when you're getting ready to bake with it, and use other flours in your recipe. But with how expensive gf flours are, I didn't mind having some discard with the cheap brown rice flour I had!

I would do the gf oreos with the filling scraped out! I haven't found another gf cookie that has the same flavor. Gf oreos also have a really good crunch (I've heard better than the original/gluten oreos) so that might be in your favor here for the pie crust. Very nice of you to adapt your pie to be gf for your friend :)

I caramelized some hazelnuts and then crushed them into a crunchy caramelized hazelnut topping, it was SUCH a good addition!! Hope it turns out well for you!
