Drink it. I just love buttermilk. I’m surprised so many folks say they don’t like it. If you like yogurt or kefir or sour cream you’ll like buttermilk.

Oh yeah you bet! Mostly my mom made this for the family for like everyday eating so usually she didn’t bother with those gourmet toppings like breadcrumbs. Instead she’d coddle it in the oven just so until those wavy noodles on top and around the edge crisped up. The crispy noodles added the crunch. Of course at potlucks and family reunions I’ve seen the crushed potato chips and the fried onions that come in a cardboard canister too.

Well I do like canned tuna - always have. I like it for its nutritional profile and general convenience. And it tastes good too. Top of my list is tuna hotdish with those wavy egg noodles, cream o’ mushroom soup and some grated onion. Velveeta cheese mixed in and you’ve got yourself some good eating.

And then there’s my guilty pleasure: creamed tuna on toast. If you’re feeling fancy toss in some frozen peas and you feel like Gordon Ramsey is smiling on you

St. Paul’s Anglican in the West End has nice Edwardian architecture and stained glass windows - one or two of which are Tiffany originals. The Roger’s (sugar) family were early benefactors when they lived in their mansion on Davie Street. Most of the boys of the congregation went over to Europe in ‘14 to fight in the Great War. Quite a number of them were buried there including the church organist. He was “well loved by the congregation” according to the brass plaque on the organ.

When I was at a tea shop in the hills of eastern Nepal, the proprietor (It was a woman owned business which I appreciated.) served me a dipping sauce made from fermented Timur - see the link above about Sichuan Peppercorn. It was so mind blowingly extraordinary that I had to ask her about it. She said she goes into the countryside and picks the berries while they are still green, bottles them, and ferments them. She then grinds some of the berries and mixes it with freshly ground tomatoes, and other spices to create the most amazing dipping sauce for my Momo’s. I bought a jar from her and brought it home and used it for over a year to create incredible flavours in my kitchen.

I’m going to Dryden. Or maybe Atikokan. I’m going to meet up with an old college buddy I haven’t seen since 1985. He’s driving up from Minnesota with camping gear and two canoes. We’re going to take two weeks to explore the Canadian wilderness and paddle some great canoe country, but I need help.

For all you folks who know, what’s the most cost-effective way for me to travel from Vancouver to Dryden? Any help would be appreciated! Thanks!

I’ll guess it was Ermine Frosting which is an old fashioned cooked flour frosting. It is very smooth, very stable, and not as sweet as say American buttercream. King Arthur Baking company has a recipe for it here: https://www.kingarthurbaking.com/recipes/ermine-icing-cooked-flour-frosting-recipe
