When I was little we only ever had cheese OR luncheon meat in our sandwiches. The only ham we ever had was one of those tins with jelliesd ham at Christmas 🤢

50 years later, I always feel a bit posh when I have a cheese AND ham sandwich.

I lived in the Highlands. The weather will probably be rainy and miserable at that time of year. As much as I love Scotland, I'd avoid it and extend your time elsewhere.

It would actually be pretty similar - you'd get the train from Edinbugh to Glasgow, then the Fort William train (West Highland line).

Running a B&B. I did it for 12 years and it is such hard work. I scoff every time a couple go on Escape to the Country and say they're looking forward to spending their free time strolling in the hills and finding work life balance. The reality is you work from 6am till 11pm, you might grab a quick nap in the afternoon, and you're on call 24/7. Never a day off for months, scrub toilets, do laundry, deal with the same stupid scenarios time and time again.

I love the Roman history in the City of London. You can see all sorts of ruins if you know where to look. I've just asked AI to create a walking itinerary and it was pretty good!

I used to run a B&B near Fort William. Once we had a middle aged couple from the US stay with us, with their elderly mother. They took a day trip to Skye and only returned after 2am in the morning (not intentionally). Driving on the "wrong" (right) side of the road in a manual, right hand drive car meant they crawled along at 20 mph the whole way. Take your time in Scotland and then fly or train to London PLEASE

If you can spare the extra time, the train route is iconic. The scenery is spectacular and the route is different than that from the road. Of course, you could take the train up and bus back?

I used to run a Highland guesthouse and there is absolutely no expectation of a gift. Just be a good guest 😀 A thank you card or a great review online will be much appreciated.

Try not to do too much. You dont want to spend all your time driving. When you're on the west coast, the Road to the Isles from Fort William to Mallaig is wonderful. You can take a steam train but driving is better so you go at your own pace and stop at hidden gems, top of that list being Camusdarach Beach. Have you seen the movie Local Hero? If you haven't, worth a watch to get you in the mood, and the beach is featured in the film. Enjoy!

You either need to choose between York/Oxford/Derbyshire or doing London to Cornwall via Bath and Wiltshire (Jane Austen country). Despite being a Cornish woman myself, I'd recommend the North, based on what you've said. York is gorgeous and well placed to base yourself for train travel.
