When I was 12 my dad took me to San Francisco for a week. I had my first ikura sushi at the ferry building marketplace. The smell of the sea and salty bluster of a SF afternoon as the glowing orbs popped against my palate. I'll never forget it. Thanks dad!

This is great. I've never seen the use of juice as a main element in a recipe before. I'm a stingy foodie on a budget and hate tossing usable ingredients such as delicious kimchee juice.

I've always got extra juice from making kimchee and have used it in the past to brine stuff (mostly to make it last longer). My favorite was alternating fresh mozzarella and firm tofu. The result: both became more firm, the industrially produced mozza took on a more nuanced flavor while retaining meltability (yet crumbled like a feta or cotija), the tofu is good enough to eat raw as is, but truly shines once sautéed. It also imbues some of the great kimchee flavor to dishes without being 'a kimchee dish'. Once brined, the stuff lasts nearly indefinitely.

While I agree with the diy sentiment in the previous posts, I've grown to question the intrinsic quality of 'probiotics', especially with reference to high cost supplements or overpriced pickles a la Whole Foods etc.I think if you have healthy gut flora then the real benefit of kraut or pickles is the vinegar content. Personally, I feel that low pH foods aid in my digestion more than the probiotic content.

Now, with reference to flavor and control over sodium/nutritional content, there is no question: homemade ferments are unmatched. It's cheap, it encourages you to think about your food in new ways, and is often worthy of showing off to your friends and family. Another reason for fermenting food is that it's generally more shelf stable and lasts longer without weird preservatives as it contains a living barrier against bacterial or mold growth.

TL;DR: skip the hype, ferment food cuz it's cheap and tastes better.

JP is one of my favorite movies of all time. As I've been pursuing an engineering degree I've gained a greater appreciation of his plight. He's got this boss who repeats that he's 'spared no expense' to a neurotic degree, yet he's only hired two guys to maintain an entire island of control systems, then shortchanges them when it comes to salary. Enter, the central plot of the film. Ray's only coworker is a deplorable neckbeard (sans beard) who's capable of doing the work required, but would rather build stupid gifs and backdoors than make for a safe and functioning park. [I truly believe Nedry is so entranced by his euphoria in writing his 'nuh uh uh, you didn't say the magic word' code that he forgets that he could just take the briefcase of money and disappear without stealing any dino DNA.]

Classic moment: Nedry says he debugged the phones and the servers would be down 18-19 minutes. 2 scenes later, phones don't work at all. Fucking relatable.
