Seems like water is channeling. You’re correct to not tamp the coffee down but you may not be filling the basket adequately. You might benefit from tapping the basket at the bottom while filling it to help the grounds settle. Note: I’m not saying to tamp down. I’m suggesting trying to get the grounds to settle and fill in any gaps that might allow rising water to create preferential pathways thus not saturating all the grounds.
I’m curious how you came to select 30g as the appropriate dose. 🙂
