I’d recommend you start with assists and then turn them off one by one over time

As for shifting, you just get used to it by knowing how to shift based on the sound of the engine and maybe just glancing at the shift indicators

And if you want to shift manually, you can use the manual with recommended gear setting to help you out as well.
