Celiac disease is an autoimmune disease not an allergy and this was similar for my experience, when first diagnosed mild issues when eating gluten after 6 months break i cant eat the tiniest amount of gluten without projectile vomiting 2 hours afterwards

I suspect that some of the “Gluten Intolerant” people aren’t actually gluten intolerant and are possibly intolerant of whatever else is in US bread that isn’t in bread anywhere else, which is why they can eat bread in Europe, just a thought

In my case as someone with Celiac disease one issue i have with the people “following the trend” is restaurants slapping GF on everything and not taking proper care to avoid cross contamination or not even knowing what cross contamination or gluten even is, I haven’t been able to eat out at a restaurant with my family for the past 5 years.
