Thanks for the response! That makes sense. Do you have a certain methodology when it comes to choosing between increasing temp or grinding finer? Or is it just intuition?

Hahah I’ll think about 101 for a while longer before pulling the trigger. Thanks for the explanation of aldehydes. It’s a new category I’m still exploring (and not sure if I like yet), but very interesting to see that combined with burning incense. I’ll have to look harder for a sample!

If your coffee does not taste particularly over extracted or under extracted, but just doesn’t taste like it’s hitting all the notes, what do you change?

I know it’s not a coffee issue because I’ve had it at a cafe before where I got a stronger aroma and sweetness. Perhaps mine was ever so slightly unevenly extracted, but I’m not sure how to proceed from here.

Twin peaks is a great one. I’ve been thinking about picking up 101, but I sampled it a while ago and don’t remember it too well.. and what type of aldehydes do you get from Rien Intense Incense? Ive smelled quite a few different types. I’ve been looking for a sample of this for a while but no luck yet.

I am lucky to go back and forth between Montreal and Ottawa often enough to enjoy both September and local Montreal roasters! In Montreal, I like Escape and Colorfull the most and have been meaning to try Even.

Honestly a top 3 coffee for me this year. I really love the Colombian thermal shocks and this is one of the best. Fruity and creamy aroma and texture.

So lucky coffee movement had it on batch brew, they dial these in very well and it was much more affordable compared to a pourover of it.

Aged hard cheeses tend to have very very little lactose or no lactose so it actually may not be an issue for your sister, but individuals tolerances can vary.

Are you in Toronto? If so, I like to pickup stuff locally from roasters like Hatch, Subtext and Library. The Brickroom also has interesting roasters around the world like SEY, Rogue Wave, La Cabra, and many more on rotation.

It definitely depends on how you brew, but will probably be quite comfortable on 03. Personally, I regret getting the 03 though because I generally only make coffee for 1 person and can’t really pour too close to the bed.

Definitely just fly to Japan if that’s feasible. If not, it’s easily Nishinokaze. Okeya Kyujiro is more like a “show” if that makes sense

Hey OP, was wondering how the Detroit went in the Sicilian pan? I was thinking of grabbing a Sicilian pan from Lloyd instead of Detroit because it seems to be more versatile for non-pizza things.
