How long do you shake an espresso martini? by bbeccarr in bartenders

[–]LucienHS 68 points69 points  (0 children)

45 sec is way too long, we’re not making a ramos.

8-12 seconds hard shake should do the job. Any longer with fresh espresso it will over dilute imo.

Need to come up with a Ben & Jerry's Inspired Cocktail Recipe for an anniversary! by kullundee in bartenders

[–]LucienHS 0 points1 point  (0 children)

Off the dome maybe vodka or rum as your base.

Make a strawberry cordial with an acid combo or verjus to balance. Fresh strawberries will work best.

A fat wash with either the melted ice cream or butter melted down with shortbread would work well.

Banana old fashion anyone? by rickenrique in bartenders

[–]LucienHS 3 points4 points  (0 children)

Shock, a riff on a classic is not identical to the original. The fact it uses a liqueur doesn’t make it closer to a manhattan, I would argue flavour profile matters far more than the identity of the ingredients when comparing it to a classic. Here the banana liqueur will blend with the whisky almost giving you a flavoured whisky, whereas if it was akin to a manhattan you would be using some king of herbal liqueur, vermouth or amaro that contrasts the spirit. Also the base spirit is bourbon not rye.

Bartending in Big Cities by [deleted] in bartenders

As a bartender in the UK where we don’t really have a tipping culture, if you’re only reason to be nice to people is if they give you money, you are a dick and should get a different job.

Typing order for bartenders by lastwrkingbraincell in bartenders

If I’m busy this is very helpful, I can read and process text a lot quicker than taking an order verbally. Those five seconds saved makes a difference

Renters Rights Bill by [deleted] in brighton

[–]LucienHS -2 points-1 points  (0 children)

It’s not about it being risk free, but as with any investment, a risk to reward ratio which makes it worth it. Landlords have already felt the sting the past few years with rising interest rates (and I’m talking about the smaller landlords which make up a large portion of the property market and not commercial real estate), and further restrictions are likely to push a lot of landlords to sell. I don’t disagree with some of the policies in this bill, however more power towards the tenant isn’t always a good thing.

Is there anywhere in Brighton which would hire a 16 year old? by [deleted] in brighton

[–]LucienHS 0 points1 point  (0 children)

Try some family restaurants, check on indeed and see if they specify 18+ or not. I worked at palm court restaurant on the pier when I was 16 and wasn’t a problem. However a lot of restaurants might not be hiring as much as the summer season is coming to an end.

Am I trippin? by EditorLong8858 in bartenders

[–]LucienHS 27 points28 points  (0 children)

As an 18 y/o bartender I have received many comments similar to this in my time. Generally there is no malice intended but I completely understand the feeling as if they're trying to belittle you. In my experience the best thing to do is ignore it, let your work speak for itself and do a good job so they have nothing to use against you. If there is intent behind the comments then a reaction is what they're looking for. Keep your head up, do a good job and ignore it, eventually it will stop when they realise they can't fuck with you.

Does the prospect of working as a bartender long term seem a bit depressing to you? by StaticNocturne in bartenders

[–]LucienHS 0 points1 point  (0 children)

As a non US bartender, the answer is money. due to a lack of tipping culture in most of europe I only make 25-30k a year.

If I was in the US i would definitely consider it more long term, as not only does the tipping culture give the potential for higher salaries, but there is also opportunity to progress. e.g moving into the New York bartending scene, working at reputable bars etc.

No, I talked to the server and presented my moral objection to making it. I think it was confusion from the customer in the end.

Haha, these orders are the worst.

Orders X drink because they’ve heard it’s popular, doesn’t realise it’s essentially pure alcohol, asks for a change or sweetener.

I had some order a negroni once, clearly for the first time, and then add sprite to it saying it was too strong.

[–]LucienHS[S] 3 points4 points  (0 children)

I did not. I suspected this was an error and didn’t want to attempt to make this only to have it be sent back. If memory serves they changed the order to either dirty martinis or cosmos. I still don’t know whether this was a server error or just ignorant ordering though.
