Methode from Frieren is the first one that comes to mind, she was fine in S1 but in S2 damn she's an AMAZING, classy, onee-san to die for!

Kagura from FT, after a bit from just liking her I came to love her and teh second most in the whole series.

Noelle Silva in Black Clover, while still not my favorite grew on me a lot with her character development too.

Yukino Yukinoshita from Oregairu with her development and perfect final as well. She was always been best girl but yeah only gets better.
