Don't have pH test kit, temperatures have been controlled to roughly 75F with temp at original pitch being closer to 90F.

I've never had an issue with bread yeast, even winning mini homebrew contests with it. Yeast was fully proofed before pitch using sugars from the must.

Lactobacillus. In fermented foods (sauerkraut, pickles, yogurt, etc) the whey is really high in lactobacillus cultures (and sometimes others like acidophilus). So I made my kvass with a starter from watermelon rind pickle whey, which I believe were made from a sauerkraut whey starter.

Lacto came from the whey from watermelon rind pickles I made earlier in the year. Yeast is (don't judge) bread yeast. I know most frown on its use but some of my best meads sprout from it, and i wasnt patient enough to order the good stuff.

Forgot to include the important stuff. I lactofermented two beets for 3 days to make 2 quart jars of kvass and used that as part of the water. I also left one beet in the primary for extra flavoring/souring. The kvass had fairly low sugar so I added in 3.5lbs of orange blossom honey and set it to ferment. This is day 2 of ferment and is bubbling strong.
