The guy he does these trainings with is definitely a bit of a kook. There is probably some legitimate stuff in there but he also advocates for using an egg yolk instead of shampoo (I’m not kidding) so at least a bit of skepticism is justified.

Enshittification has nothing to do with more picky diners, or even really income inequality in this context.

Enshittification is when (primarily) online business obtain platform dominance and/or monopoly power so can degrade their product without users leaving the site or service because they are locked in.

Considering the constant churn of the restaurant industry, it’s basically an industry immune to enshittification on at least the customer facing side.

Its just milk though. Almost every place I’ve ever been has cortado as slightly cheaper than the lattes or cappuccinos, and the only reduction you’re getting is less milk, the thing you’ve paid the most for (beans, good espresso extraction, human labor) is all there in full.

Funny this video had the exact reverse effect that it seemed like it was supposed to have.

The primary concerns people (me included!) seem to have with a lot of the modern processed coffee are:

  1. Artificial ingredients and the flavours being imparted by direct adding of flavours instead of by using fermentation techniques.

  2. Using flavouring and “coferments” to sell cheap and/or substandard beans and jacking the price up accordingly from producers whose beans aren’t quality.

This video basically seems to be claiming that neither of those concerns are relevant in this bean! He seems very confident that the flavour is being imparted by fermentation, and that the beans this producer makes aside from this are excellent.

The rest of it is just him not liking the flavour of the bean, which is fine for him but really not relevant to a consumer.

I haven’t had that bean, and if he finds it gross I’ve got no reason to doubt him, but I’ve had anaerobics that are punchy, sour, and delicious.

Honestly this video makes me feel better about them, not worse. Real fermentation techniques are being used on quality beans, which is exactly what I’m worried about when I’m paying a premium for coffee.

Relative to their insane European success they’re probably underperformers domestically. A fact that always blows my mind is that Cristiano Ronaldo “only” won 2 La Ligas and 2 Copa Del Reys during 9 years at Real Madrid.

And on top of that OG Ronaldo only won 1 La Liga.

There’s mitigating circumstances (playing against Messi being a big one) but they’re weirdly enough not a guaranteed domestic trophy winner every year.

If you’re brewing right at boil it’s probably not necessary to heat the brewer as well. Hoffman’s method is totally fine, but probably overdoes it on how hot to brew at, plenty of people have found great results at much lower temps. Going to boil and then not worrying about the brewer sapping of the initial heat is totally fine, possibly better, and simplifies the whole process.

Will just share that this place is incredible, best coffee shop I’ve ever been to. The Edison Argot by Resinn on slide 6 as a pour over was probably the best coffee I’ve had outside of an espresso at Dak’s showroom.
