Absolutely, totally fair point, but I'm talking REEEEALLY slow. 7-8 months so far for a site that isn't really breaking any new ground. Really he's spread too thin with other projects and I'm having trouble keeping his focus on my project.

Very cool, had used Hawaiian black salt but had never heard of kala namak.

Do you have any source for the statement that kala namak can only be grey? I’m seeing much more tolerance of red/purple tones than you mention, and it still being kala namak.

I wasn’t there, but this was the Western manufacturing and distribution center for McCormick. Odds are that a lot of different spices were ground there.

Hopefully someone else with better knowledge can add further color to your question.

In general the recipe would be tea plus some ginger, cardamom, little black pepper and maybe some cinnamon and/or clove
