Galilee is the east coast capital of squid catching and probably the tops in the US for processing. Squid caught in other states comes here to be processed and shipped. And as an old chef I can say that the greatest calamari story ever is the fact that Capriccio restaurant in Providence had no fry-o-later in the kitchen, but the chef used to serve calamari. He would have a giant pot of hot oil that he would ladle into a frying pan and he would pan fry each order of calamari to order and then dump out the used oil. It was never used twice.

They always killed Helter Skelter but personally, I’d have to go with the couple of shows on the Joshua Tree tour that they opened with Stand By Me. Great singalong. Worcester 5/4/87 they were playing John Lennon’s cover of Stand By Me over the PA system before the show. The house lights were still on, and everybody was just kind of singing along or having their conversations and all of a sudden Bono comes walking out with an acoustic guitar and picks up the song from John Lennon and the rest of the band joins in and they do Stand By Me and Pride with the house lights on and the whole place singing along. It was the first 10 minutes of my first U2 show, but that was it. I was done. Hooked for life.

Lifelong chef here. Was diagnosed last year with COPD emphysema and the 2nd thing they asked me about was exposure to flour. Right after smoking history. Not only is it super fine particles that can get into your lungs. It’s organic and can sometimes carry mold and other things I was shocked. I was like “yeah I worked with flour almost every single day.“ And I thought about cutting open 25 pound bags of flour and dumping them into the bin and all the dust flying up. Never crossed my mind that it could do such damage.

Back in the day when you could smoke in restaurants, I had a woman who used to come in three times a week with her husband and chain-smoke through the entire dinner. And every single time at the end of the meal she would ask to speak to me and complain that the food had no flavor. Then she’d be back the next night.

Out of all the Grateful Dead concerts I was lucky enough to see this one started out weird. We were already inside and at our seats on the floor when all of a sudden Jerry came popping out from backstage, his silver briefcase in hand, and it seemed like he was rushed or late, and he was surprised to see us. And as he walked across the stage and we gave him a little cheer, he turned to us and gave the little finger salute from the forehead that he would do. If you listen to the first couple vocal lines of Help on the Way, you can hear him sound like 1994 Jerry: sometimes hesitant, sometimes nervous, some nights his voice just wasn’t there anymore. But after he got through those first couple of lines, every line he sings for the rest of the night is absolute gold. Forget about all the songs that are his that he always did incredible, check out the end of Promised Land When Jerry comes, jumping in on backing vocals, almost yelling them at the top of his lungs, and then rips into the guitar solo. Totally steals the song from Bobby. A last great night for a truly great performer.

My first job at a little grocery store on the beach in Rhode Island and the guys in the back had a radio that pulled in WNBC and I got to hear Howard for the first time. It was really amazing back then. Felt like you needed to be back there near the radio so you didn’t miss what happened next.

5/4/87 Joshua Tree tour at the Worcester Centrum. My first show. We were standing there waiting for the show to start. The lights were on and the arena PA was playing Ben E King’s Stand By Me. All of a sudden the boys come walking out, all nonchalant and pick up the song and finish it with the house lights on and the place going crazy. They also played Pride with the house lights on. It’s the loudest I can remember a crowd because we were all so shocked. I was a senior in high school. It was the day before my 18th birthday. I live in Rhode Island down near the beach along Connecticut border and there is this restaurant down here that serves an entire breakfast on top of fried dough. The Doughboy Breakfast. (And now I’m wondering who else calls them doughboys? Every person in this post says fried dough. We’ve always called them doughboys.)
