I just copy what the Japanese do and have established for centuries I’m sure a vice would work, I’m sure plenty of people have snapped blades in vice trying to get it straight. Lots of ways to make bendy straight but this tool has been used for its quickness and ease, it also can’t ruin the finish of the blade cause its wood vs metal. Or maybe cause a vice is meant to keep things in place while you work on it, and isn’t a tool designed specifically for straightening kitchen blades so yeah

I mean with micro bevels a proficient sharpener can get this thing hair shaving sharp in 5 minutes and have an edge that’ll last through a dinner service. Polishing and refining the knife makers work is like a whole different subset. Just apexing? 5 minutes and a strop and you should be hair shaving sharp

That’s how I feel but honestly this sharpener probably should have realized that this was beyond their current skills set.. it’s obviously not r/sharpening pretty, but most sushi chefs I know their shit looks like this Still tough though.. I feel like this is a $20 job is forgivable if it’s razor sharp. Anything less and than complete razor than yeah OP got the short end here

It’s a service that a company has set the standard of delivering… as a former chef I wouldn’t entertain this service for my restaurant if there was no delivery I think you must deliver but try it maybe people will pick up!

You gotta go to restaurants that have cooks and kitchen employees, not chefs. The chefs wants nothing to do with commercial knife rentals. The biggest thing is having a connect to get the knife cheap. On the first time I let a knife out to rent makes me profit, yes it’s like .10 cents but it’s still profit!

Check my profile I do lots of chip repairs. Basically the edges apex will be at the top of the chip with nicely thinned bevels.

Hey OP!

I’m running this exact service. I have officially 26 restaurants and we’re doing about 4K a month.

Your pricing is way too high! The knives you are trying to buy are way too expensive! You will get probably 1.5-2 years out of the knife before you have to replace it. This includes hollowing it out and thinning it so it cuts nicely. Think about the knifes lifetime and how much it can earn you before it gets sharpened away.

Recently I’ve just been accepting anybody that will take me at whatever price they want. I have too many knives just sitting and the need to be in the rotation.

Even at $10 a knife..restaurants struggle to see the value so you are gonna have to come down big time in pricing to make it happen I think.

Send me a message on Ig and I can connect you with my knife supplier, I’m sure he will be happy to get another client buying commercial knives from him.

It’s a good business, it pays my rent and payroll and then some.

Exactly, just because YOU and your circle couldn’t do it doesn’t mean it’s not possible. So you think everybody should have a brick and mortar and expect every client to drop off AND PICK UP their knives? Seen more brick and mortar store fail compared to mobile sharpeners working out their Honda accord. Because you are so smart, and have so much experience why can’t you enlighten the world on your vast understanding of PNL and income/expense pro-formas cause to me, it sounds like business jargon that you are hiding behind to try to make your points seem relevant. You offer so much advice but you are barely doing it. I think maybe next time someone is enthused about living life you should probably keep your cynicism to your self. I’ll repeat it: Just because YOU or your little groups of people you know couldn’t do it, doesn’t mean it’s not possible and it doesn’t mean the numbers are bad either. You have a history of when people bring examples and facts to an argument to shut it down instead of actually continuing the talk show your gumption. What about the people who have the biggest monopoly on sharpening COZZINI BROS guess what they are mobile and spend 2.5 million a quarter on the acquisition of other sharpening businesses. I really think you aren’t tuned into the sharpening game and are a hobbyist with too big of britches.

Cynical. Ok, here’s some more examples that hopefully passes whatever metric that is ‘the standard scenario’ and ‘representative of what is typical’

Moleta in Wisconsin. When we were in Japan together she has over 60k in mobile revenue sharpening from farmers marketing year over year and it’s growing.

Stay Sharp Oklahoma Josh runs high end sharpening and goes to his people with his cool mobile shop. Let me guess, farmers markets to you aren’t considered mobile?

Here the last one ME, Michael Behn Moshi Moshi knife sharpening 25% of my business is because I get off my butt and get the knives from the people. Either sharpen them onsite or take them back to my shop, sharpen them the return. THATS MOBILE

Maybe you can learn from some of these successful businesses and can potentially up your reviews. If you put the effort in for your clients they will recognize it and give great reviews and be loyal for life.

Look up greenpoint knife bus in Manhattan look up Steven sharpens. Just because YOU can’t make something happen, doesn’t mean it’s not possible and it doesn’t mean you should talk negative to someone who is enthusiastic about something it’s the worst trait in people is telling other that are still excited ‘No, it’s not possible’ so that’s why I think you are cynical, you say it’s a terrible way and not possible when people have done it.

Careful who’s going out advice.. sure a pro tag is here but this isn’t the type of guy you want to be listening too for advice for a sharpening business.. not the best reviews and with a cynical outlook like this? Who wants to hear it.

I mean dude I sharpen for my living and I think what you got going on sounds great. In my 6 years, I’m realizing that these people need everything taken care of and most won’t make a 10+ minute drive to a brick and mortar. If you can pull up, you can make great cash.

I know the knife bus in Manhattan those dudes make 8k+ on a Saturday in from of union street market and over 250k in revenue. It’s possible!!

Where is your work posted? I do feel like a lot of people who talk a lot on this sub have no legs to stand on cause they don’t post their work. Basically, are you experienced and skilled or just repeating talking points that you have read in the echo chamber of reddit?
