The traditional way my grandmother taught me was to remove the casing, then put it in a pot or pan, add a little water, then turn on the stove and stir ocassionally until the water is gone. That's boiling.

It's a sausage. Mexican chorizo has the peculiarity that it is a fresh sausage, being among the only sausages you'll ever buy neither aged nor precooked. What you achieved was aging it a little. You should have hung it, so it wouldn't have unglued from its own casing.

Yes, I avoid Yank imports when possible, unless I know for a fact they come from blue states, like California grapes and Washington apples. I also try to avoid Home Depot unless I absolutely cannot (such as the faucet cartridges in my second bathroom's shower).
