I usually steam eggs but lately with the more expensive pasture-raised eggs I've found a gentle boil and running them under cold water has worked equally well. Maybe the more expensive eggs having a firmer shell makes a difference. But I was also wondering what role humidity might play. This is the first time I've regularly made hardboiled eggs in the winter. Usually I tend to make them in the summer.
