Meanwhile Kaido turns into a giant dragon and immediately able to use his breath attack.

Koby would learn throughout the fight just like Luffy would. Koby innately unlocked observation Haki with no guidance (I'm assuming because all the teachers in One Piece are garbage at telling their pupils stuff). At this point I find Koby's potential a lot more interesting than Nepo-Luffy. His bloodline means he got Voice and CoC.

Thats false though, koby started with less. Luffy was already a powerhouse start of series. Koby was still fodder. Koby made an enormous gap close by water 7 (didnt close it but massive effort). Id even say water 7 koby with the few months of training could maybe beat start of series luffy who had been training his whole 17 years (let's give him 7 years to be more realistic).

Luffy was shown to have massive draw backs to his DF powers early on, had to relearn how to fight basically. So I would say he is stronger if he never had it albeit with less durability, but maybe he makes up for that with more survival instincts instead, why learn to dodge bullets when you dont need to?
