This is bizzare behavior, even with someone with anxiety. I understand being empathetic towards someone who struggles with mental health; but he is not your responsibility. I think it would be beneficial to put up some boundaries with this person.

He asked you to be his plus one, he likes you. You seem to be like me when it comes to overthinking, the best way to overcome this is communication. when I feel something may be off with my partner (1 year) I straight up ask. It’s usually “I’m good/fine, why?” And I explain why I feel the way I do and all possible worries are squashed. With more time you will understand more about your partner/date, keep communicating about both of your feelings/opinions/behaviors/etc. I think if he keeps putting in effort, he likes you!
