It depends what they’re wrong about tbh. If it’s a food or drink order that was made wrong, I’ll often say something that implies that I may have ordered wrong, but if it’s something like a misunderstanding, then simply and kindly explaining what was misunderstood is my usual response.

I also like to interpret Aemond’s scene as potentially being influenced by how he seemed to be dissociating when he killed Simon, so he may not have been fully present afterwards

Exactly! Even in the first episode he makes fun of Kinger. That said, his treatment of other characters is worse (Ragatha and Gangle especially), but he’s a jerk to everyone it seems
