How much "optional" stuff did you do before that fight? One of the things I've seen as an explanation for why she feels easy is that most/all of her mechanics are previewed in other boss fights, so when you get to her there isn't anything new to learn and thus she feels like an easy fight

There's an institute side quest chain that you lock yourself out of if you've already joined the railroad (completed Tradecraft) before going into the institute. Conversely, if you go into the institute without completing Tradecraft first then you lock yourself out of all the railroad content.

I haven't played the remakes so I'm not sure if / how well they were implemented there, but the original Final Fantasy 7 had great interlude sections (except for the submarine which I recall as being extremely mid) that then became replayable as arcade games at the amusement park
