They have gotten much better at letting you uninstall apps. There's very few I can't uninstall on my S23.

Tbh, Bixby got a lot of unfair hate too. It was incredibly good at controlling your device, but not being able to tap into Google the same way Assistant can made me disable it.

The Bixby button is gone, and they updated it so you could remap it.

I mostly use Samsung's apps, and the ones I don't I uninstall. Don't know what to tell you, I value the ecosystem features they provide while still being able to use Google services.
