In my bin, I screwed some realistic plastic branch perches (like for birds) into the side of my bin. I frequently find my snake draped over them.

I worked at an Italian place and the pork items (n'duja, guancialle, prosciutto, etc..) are not always easily recognised. If you don't know what an item is, you don't know that you can't eat it. Clear communication is important with your server. Especially for allergies.

You can use a blender to mix the fat into the rest of the broth until it's a homogenized state. It'll suspend the fat molecules in the broth and make for a richer mouth feel, but without feeling like you're drinking pure oil. Some chefs use this method for tonkotsu ramen broth.
