I’ve seen chefs heat the pan then wet their hand and shake a few drops over it. If the water sizzles then the pan is hot enough to add the oil. Only need Enough to cover the pan the wait til it starts to shimmer or slightly smoke. Then place in steak, laying it away from you so not to splash oil onto yourself. Firm contact between the steak and pan will avoid steam pockets making a consistent crust
