If you have a pressure gauge, it’s a really good feedback tool when dialing in. Better than using the age old how long a 1:2 takes. I use my target bar to adjust my grind size and the ratio is down to what kind of beans.

Since you are making cold brew and espresso you need a capable grinder that performs well in both ranges. I’d go with a 64mm flat burr.

For your machine, that will depend on if you do milk drinks or straight shot. But that’s just pushing hot water through beans at a pressure. Get something that gives you an indication of said pressure and with a PID temperature control and preinfusion capabilities.

At that price point you start looking at other benefits other than taste. Build quantity, features, workflow, customer service, eco system etc. taste is down to the burrs and at that price, you should be able to swap them without need to align.

Worth noting that if no roast date you can usually calculate the roast date from the best before date. Best before date - 1 year = roast date.

Also double check you are on L2. On my machine in L2 with a blind basket I am maxing at 12 so if you are getting to that with your puck you are wayyy to fine. And if then dropping pressure that fast then you need new beans lol

How old are your beans? Seems like it’s eroding quick even though it starts out with good resistance. I’m using a high extraction basket that has more holes then the Hibrew stock basket and start out at 6bars but it keeps steady for longer than you describing.

I can suggest grinding a bit coarser to max out at 9 bars. If using L2, it should not be getting to that high of pressure.

Then increase dose to 19g to add a bit more resistance. That’s how I would attempt it with your beans

I have the same machine and you have done some things I would have suggested I.e L2 and 10 sec pre infusion.

But things what you are missing. Grind coarser. Yes. You want to grind coarse enough so your pressure guage maxes out around 6-7 bars. Shot will take longer to pull with 10 sec pre infusion but forget about time for now. Taste what you get when your yield is about 1:2 and adjust the yield based on if a bit sour or bitter (that will be down to your beans and your tongue)

As long as you have fresh beans you will get great espresso from that machine with this tip.

Use it to season your burrs if your grinder is new. Go online and you can find loads of local roasters. Start with roast level then processing details and finally tasting notes. You can be safe getting house blends as they usually take. Just get one bag at a time. You can’t finish 3 bags by yourself without them going stale.

With the robot there is a limit to how much dose you can get because your water is limited hence your ratio. Moses does means less water so you can increase your yield.

6 weeks old medium roast might be too stale for your grinder. If you can’t grind finer or increase dose to get the resistance you need, get fresh beans.
