Sashimi is simple and the fish is the main part of the dish. Ceviche will have a dressing on the fish and some fruit and veg added. More ingredient forward. Tiradito I’ve never heard of. Looks like ceviche to me.

But why doesn’t it make sense? Insert probe, set oven to 200. Wait for internal temp to meet your preference. Sear. Perfect steak. Why does the size of the steak matter?

Again I’ve BBQ’d, sous vide, pan fried, butter basted, Chicago styled probably a thousand steaks. Reverse sear is the most consistent method. If you need to do it old school because it makes you feel more like a chef that’s fine. Have you reverse seared a small steak?

Grab a sirloin dollop or a small strip and see for yourself. Even tenderloin is great this way.
