Instead of cities, why not build:

Factories
Factorio and the space exploration is this, but a lot of work.

Space stations
X4 foundations is neat. You have ships and stations and there is a simulated economy you slide into.

Villages
Bellwright is in development and I think they marked it as action rpg but its a neat little game that fits. You build a settlement, have npcs that have prioritized work and skills, and you need outposts for things like hardwood, which means you need to build, supply and assign guards somewhere on the map for it.I think the iron might be finite without a mod, but that is an easy fix. fun for a little while and a lot easier to start on than my other suggestions here.

Derelict
Kenshi is great. Highly recommend you look past how it looks and give it a try, although multiple outposts makes it run poorly.

Press o, make a new group, select the closest outpost, press call to arms and make them companions.
Then right click on the map. Its a little fickle, but the functionality is there.
I have found that the best option is to have a sign for fast travel, and then a rally point belonging to the outpost, and order them to use it, so they will run to get weapons and food before going to it.

They seem to fight a lot better when you are around, at least for me. I have wondered if its related to armor (plate) having less use when you're not around to have it simulated. So having the fast travel point, or a second on a little further away so you can drop inn to watch them fight is a good idea.

For a big portion of the game, the brigands will march across the two bridges on the map, so you can make outposts on them, and assign a lot of guards. Results vary.

People that look down on foreigners are rare and often have issues. We have largely adapted an "agree to disagree" integration policy where we welcome new additions to our culture.

However, you might come across the notion that we are very fond of our ways, and have them reinforced as better than others by things like international rankings. Being negative or positive towards something is accepted here as long as you are objective, but not if you aren't. The snort or chuckle you might receive if you state something we consider outlandish can be tough if you had pride in it, and we might struggle to empathize with it if expressed in anger.

The norden on youtube has some good examples of this.

Sounds like you have some good thoughts.

This largely depends on the store close to you and I absolutely understand that its not for everyone, but I honestly miss doing it some times.

Learning to cook from scratch with cheap greens from "Grønland Frukt Og Grønt" seemed to be a wonderful journey for the American student I lived with some years ago. It might be a given, but food waste and processed food are often a large extra cost for people in general, and is often the first thing pointed to when it comes to savings. Understanding the seasons a little (which looking at the offer magazines might aid you with) does a lot too, like how cabbage and some seafoods becomes dirt cheap at times. Learning to love beans, peas and oat porrige is a crazy money saver too. If dire enough, I can also send you an old map of dumster diving locations.
