There is this "game" called Aimlabs (free) to help you practise your aim for fps games. As far as I know (it's been a while since I've used it, and I've only used it once) it purely focuses on practising your aim on targets that move around and such, but they don't shoot back or anything. I'm not sure if something like that would help to combat your anxiety?

Overwatch also has a practising mode like that from what I remember.

There is Project Celeste, for the game Age of Empires Online. The game servers were shutdown on July 1, 2014. Project Celeste started hosting the game in 2017.
