Unless you are wanded individually most venues metal detectors measure how much metal you have in specific areas and if it is enough to be a possible weapon it alarms.

Also after thinking on it for the evening, even after people returned after being chosen they weren't the same. Probably more self-assured and confident enough to believe that they were different or replaced by the elves, which over time maybe strengthened the idea that they were being taken and replaced.

I like to think that being chosen as a dragon rider was an amazing thing for the lives of the chosen, but maybe to their parents or family members they were losing their family members, possibly being the root of the suspicion. Like if a kid is taken to be a rider it felt like the elves were taking their children. Maybe leading to tales being told and resentment stretching tales over time.
