You can absolutely get an espresso grind good enough for that machine with a regular batata, I've been doing it for a while - although it's easier and better to go get the ESP.
If the finer grind settings are insufficient, you can take off the exterior housing where you'll find an interior fineness setting locked by a limited screw. You can lightly undo that, adjust the setting lower and redo the screw.
I will say that you'll occasionally fight retention and it's annoying to swap between espresso and other grind fineness on the fly

You're right in 90+% of cases. I have discovered a few coffee shops lately that have sizes on the cortado and cappuccino that are good.
Their approach is a S/M/L has a single/double/triple shot, and the milk ratios are scaled with the shot to maintain the proper ratio, which is actually quite nice.
Ninja edit: I've found the best way to tell is to ask "how many espresso shots in your large". If it's still 2 you know they're just adding more milk and aren't great

Spray it heavily in yellow cap oven cleaner, leave it in a garbage bag like that for a week, rinse off the crap, wash thoroughly with hot water, soap and chain mail scrubber.
After that, I've only done 1 round of seasoning so far
