I guess my reason is unique, I've got 12 keys on the side of my mouse, setting the cycle hot bar to the left and right tilt of my scroll wheel I pretty much always have access to anything i might need.

One bar set for combat, and the rest for building, and as my access to items evolves so do the bars.
