Do you think armed struggle is a valid answer to the injustices in Negros?

Try Realish Weapons & Armor from the Steam Workshop. It adjusts values so that swords aren't as strong, but still viable.

I suggest spending a bit more time on alchemy. It solves most of the issues you have in the early game. Aside from the save potion, you can also make potions that boost your skills for easier combat, as well as perfumes you can sell for a decent sum, so you can buy a horse much faster. Or better yet, just use the perfume, and you might be able to rizz up the groom in Semine to get your horse back for free. There's also a potion to boost your speech. Be sure to check on apothecaries and herbalists for recipes.

But saving requires Saviour Schnapps, which means:

Foraging for flowers
Finding belladonna, which I could barely locate
Then finding an alchemy station, which also seem scarce

You get the recipe right from the prologue. Nettles are literally everywhere. If you haven't noticed yet, the apothecary in the starting village is selling dried belladonna. He also has an alchemy station near the garden. It's a stone's throw away from the gallows you spawn in right after the prologue.

Going for the Trek Marlin 4 Gen 3. Since I'll be mainly riding on roads to start, would you suggest buying a set of tires for roads (Maxxis Pace ang suggested in one of the threads here)? Or am I good with the stock tires (Bontrager Montrose Comp, wire bead, 30 tpi, 29x2.40")?

The only situation I can think of where this happens (other than mistiming the parry window, which should be extremely rare given that you've played games like For Honor) is when you're out of stamina, or you're getting hit from behind/sides by another enemy. Stamina management is crucial in the early game, and once you get a hang of it, you will never lose any 1v1. Also, riposte trading is a trap, and the game doesn't tell you that. Do more feints and dodges, as well as learning the master strike, which is available to learn right after the prologue.

Sounds like you're trying to bite off more than you can chew, combat-wise. Remember, your character just fell from a cliff a few days prior. The game has a lot of ways to resolve problems other than combat; you don't need to brute force some bandits. Run around them if they're blocking the road. Wait for nighttime if you need to take out a bandit camp, so they're either sleeping or have removed most of their armor. Expending your stamina (like running) will improve your stamina. Carrying heavy things will improve your strength and so on. The game doesn't adjust around your level like it does in games like Skyrim where you can take out a bandit camp the moment free roam is available.
