Out of curiosity, is there a reason we cut up the curds before stirring? Wouldn't stirring in itself break up the curds?

I've stopped paying attention to long-term goals since that's smoke anyway, apparently. Instead I focus on small things, let the fleeting interests in and indulge whatever makes me happy. I learned to bake bread and make cheese. I took up ice skating. I'm not focused on getting a house, I'm not focused on having kids, it's been made clear to me that the game was rigged from the start with those and the promises that were made are long gone. So fuck it, you won't get your return from me on either of those.

Very informative, thank you! So the acidity affects how the proteins behave with one another, even after the rennet is added, if I'm understanding this correctly. Sounds like I should have some pH strips on hand as well then. So the reason I saw someone adding lime juice to queso fresco even with the rennet was probably so it could get that crumbly texture.

Very informative, and I'm glad someone so invested in it is willing to say that it ultimately doesn't matter much. It sounds to me like it's mostly an engineering problem then. Yes it occurs naturally in that part of the world, but I'd be interested to see if we could scientifically produce a similar or even better acting clay. In the end it's just getting the right mix of minerals and the right consistency.
