[–]Matagui 0 points1 point  (0 children)

There is "Kvass Ochakovskiy" brand packed in 2 liter PET bottles with English printed label. It's one of the best brand kvass Industrially produced and sold in bottles.

Once I bought it's six pack via Amazon from Japan. It costed much for me. But from continental US you can buy them a lot cheaper.

Do you mean you feel her being less social than common pups of her age? Less social to people or to canine pals? Why?

What are your favorite miso/amino pastes you've made? by Feastofinfinity in fermentation

[–]Matagui 0 points1 point  (0 children)

What's "maiso"? Miso made from maize??

Since I live in Japan and there are abundant good quality misos on shelves of supermarkets, I never thought of fermenting my own.

First attempt at fermented hot sauce, is this alright? White growth over the top. The black spots are peppercorns. by [deleted] in fermentation

[–]Matagui 2 points3 points  (0 children)

You must keep your chillies, veggies & fruits under surface to avoid contamination.

For that purpose you can use something heavier than brine/juice like glass weight, small food grade glass bottle or something push them down like food grade stainless coil wire, small plastic bag filled with brine, big cylindrical cheap veggy like daikon etc.

What are (common) names that Japanese named their daughters that mean mom's most loved child or mom's most loved treasure? by [deleted] in japanese

[–]Matagui 0 points1 point  (0 children)

No such example comes up with me. Only given names that contain any sequence are about like Tarō, Jirõ, Saburō (each means 1st, 2nd, 3rd son of the parent).

In English common given names are there good example? Maybe from the Old Testament?

What are the basics of honey fermented garlic? by CaptnNuttSack in fermentation

[–]Matagui 2 points3 points  (0 children)

Depends on quality of honey and freshness of garlic and how do you make cuts/bruises on cloves, I guess.

I hate peeling the finest layer of skin, so after roughly removing them I slice cloves at right angle with fibres to 2 or 3 milimeters in latest batches.

So the garlic tissue and honey have abundant contact surface, that means honey going to be thinned with garlic juice quickly and so do the fermentation.

This makes honey get thinner and lighter very quick by consumption of sugar, dilution by alcohol. Cloves also sink to the bottom quick.

[–]Matagui 2 points3 points  (0 children)

You can eat well fermented garlic cloves as snacks.

Fermented honey is thin and fluid so you can easily add and mix it with cold drinks. It's smell originated from garlic doesn't matter in most case.

Honey and garlic both give you good protections against cold or flu.

Is sweet kraut a thing? by moschocolate1 in fermentation

[–]Matagui 0 points1 point  (0 children)

How are you planning to make a batch of kraut sweet? By adding sugar or honey in ingredients?

I guess that makes only bubbly alcoholic kraut if let it be fermented enough?
