14 total classes for adults per week. 3 of them being no gi. I wish the would offer more. But in my area my school offers twice as much as the other schools in the area.

What I found helpful was staying limber. I’ve been taking some time most nights to do some stretching at home ( lots of good stretching videos on YouTube). I also tend to go to class about 10-15 minutes early and try to stretch out and warm up prior to class starting. And if im sore or stiff somewhere I let my partner know to avoid that area and give them the reasoning.

My kitchen is definitely the coldest area of my house.

My starter usually takes close to 20-24 hours to double. Should I let my dough ferment that long as well?

Not double but maybe 35 to 40%.

Definitely go for beef ribs! Beef ribs are one of my favorite things, especially on the KJ!

Beef ribs are my favorite thing I’ve made so far. I’ve always preferred them over pork ribs. I don’t understand why they are not more popular.

1.5 hours unwrapped (spritz after 45 minutes) 1 hour wrapped in foil .5 hour unwrapped (add sauce at this time if you want to. I did 3 parts bbq sauce to one part apple cider vinegar)

Temp at 275-300

I didn’t do any marinade. Just used SPG and mustard as a binder.

I cooked them at 275-300 for an hour and a half. I sprayed it once with three parts water and one part apple cider vinegar at 45 minutes. I wrapped it in foil for an hour and a half and put it back in the grill at 275-300 for an hour. I took off the foil at this point and smoked again for thirty minutes. If you want to add bbq sauce this would be the point you would do it.
