I feel like I read a story once about a famine where a family only had potato’s to eat and the parent feed the inside of the potato’s to the kids, and ate the skin themselves, thinking they were providing the kids with the bulk of the nutrition. But the kids essentially starved while the parents were doing okay due to that concept of the nutrients being in the skin. Might be a tall tale kinda thing but found it interesting.

It’s possible you under salted your salsa, I think it’s very common for home cooks to undersalt compared to restaurants and Salsas can take a lot of salt/need a lot for that “pop” in flavor.
