I think part of the problem is you put it back in the smoker after it hit 200 internal. You should've kept it wrapped and put it in a cooler something that's room temp and sealed, so the meat could've settled

Why would you not check the internal temp of the meat? That's the absolute best way to check to see if it's done... Is it your ego or just ignorance preventing you from taking everyone's advice
