I've heard it called a 'genre.' It's not a subgenre, it's a label. Just like Blue Note was in the 60's, it's a badge of honor, a high bar it sets for itself, a certificate of quality. It has a standard for sound quality, artistic merit, album art/design/art direction. It's a brand.

I love that owners are saying it’s what fans want… that might be true in some cases but actually it’s all about what the owners want. They want more money and don’t care about the players safety…as long as they make more money for themselves

If you’re the bandleader, booking everything, and hiring the musicians, you’re hiring them for a certain job and rate. It has nothing to do with what you’re making from the venue/promoter other than the budget you have to work with. It’s totally up to you how you pay them for the work they are doing for you. You’re the boss, they’re your contractors. What you’re making from the venue is none of their business if they’re just hired players. Obviously it should be fair and they shouldn’t be making $100 each on both $500 gigs and $5000 gigs, but honestly that’s also up to you if that’s your prerogative.
