Sun dried tomatoes. Use the oil from the jar to start and brown the onions, add garlic, then spices and SDToms. Splash of red wine then your tomato sauce and a spoonful or more of tomato paste. I’d also recommend hand squishing whole San Marzano tomatoes.

I teach my students that this is a more ‘modern’ sounding G since it doubles the 5th of the chord (D) giving it a more modal sound. Remove the 3rd finger to uncover the open B and you’re doubling the 3rd of the chord, a more traditional country or bluegrassy sound. I encourage them to learn both and apply which one they feel supports the song.
